Ralph & Lahni de Amicis, Napa, Sonoma, San Francisco
The Cade Facility is more unique for its style and placement than its technology, which is what you see in most high end wineries, bladder presses, small stainless steel tanks, half ton grape bins, French Oak barrels. The whole thing sits on a ledge on a hillside above their vineyards, with the very stylish caves dug into the face of the mountain.
The ways in which Cade is most interesting is that the vineyards are on such steep hillsides, up above the fog levels, making wonderful fruit, although of limited amounts. The winery building is a cross between a lean to and a barn, all done in concrete. That open air feel is more common in Sonoma than in Napa and it helps the wines be true to the flavors of the grapes and vineryard. A more enclosed winery space tends to stamp the flavors with the previous harvest from yeast and flavors retained in the buildings
